Carolina Cajun Wings
½ c Carolina Cajun Seasoning
1 c apple cider vinegar
1-2 lbs chicken wings

Combine Carolina Cajun Seasoning with vinegar, marinate chicken wings 6 – 12 hours. Grill or bake until brown.

Quick Method: Simmer wings in Seasoning/vinegar mixture for 30 minutes, then grill or bake until brown

 

 

Jerky/Brine

½ c Carolina Cajun Seasoning
2 c water

Slice extra lean meat (beef, deer, bear, elk, or turkey) into ¼ inch slices. Place in 1 gallon zip lock bag, marinate in brine under refrigeration 24 hours. Remove from brine and smoke, dry or dehydrate until desired cure

 

 

Yummy Shrimp
1 lb unpeeled shrimp
1 T Carolina Cajun Seasoning
1 T minced ginger
1 T butter
1 T olive oil

Heat butter & oil in heavy skillet
Add shrimp, seasonings
Sauté until shrimp are pink

It’s so good you’ll be tempted to eat shells and all!

 

 

Melt-in-your-mouth Pork Chops
4 pork chops
2-3 T flour
1 t Carolina Cajun Seasoning
1-2 T olive oil

Combine flour and Carolina Cajun Seasoning in ziplock bag. Add pork chops to lightly coat with seasoned flour.

Heat olive oil in heavy skillet, cook 2-3 minutes each side
 

 

Montana Cajun Slaw
3 c shredded cabbage
3-4 T olive oil
¼ c chopped onion
½ t celery salt
2 T Carolina Cajun Seasoning
2 T balsamic vinegar

Combine cabbage through Seasoning in large bowl. Mix well, then stir in balsamic vinegar.

 

 

Not-your-momma’s-Squash Casserole
2 lbs crookneck squash
½ c chopped onion
1 beaten egg
2 T butter
2 T sugar
1 T Carolina Cajun Seasoning
½ cup bread crumbs
¼ cup grated parmesan cheese
Ground pepper to taste

Cut squash into large chunks (remove seeds). Cover with water in large sauce pan, cook about 15 minutes until tender. Drain water and roughly mash the squash. Combine with onion through Seasoning ingredients. Add ¼ c bread crumbs.
Pour mixture into buttered casserole dish.
Top with remaining ¼ c bread crumbs and parmesan cheese.
Bake at 350 degrees until topping is browned.

 

 

Bugs Bunny Cocktail   (A couple of these will get you hopping!)
1 ½ oz vodka
4 oz organic carrot juice
Celery stalk (with leaves of course!)
2 strong shakes of Carolina Cajun Seasoning

Mix ingredients in tall glass with ice cubes, stir with the celery stalk. Enjoy!
